cinnamon bread


tried a new quick bread recipe the other day that is absolutely delightful, and thought you all might enjoy it too.  I think it would be a perfect addition to Easter brunch, or for that matter any time of day.  I have a bit of a weakness for all things cinnamon and sugar, so I could eat it…thank you for very much!  It’s moist and has a nice little cinnamon-sugar swirl running through the middle of it.  It’s delicious!

Cinnamon Bread
1/2 cup butter, softened
1 cup sugar
1 egg
1 cup buttermilk or 1 cup milk plus 1 tablespoon vinegar or lemon juice
2 cups flour
1 teaspoon baking soda
Cinnamon/sugar mixture:
1/3 cup sugar
1 teaspoon cinnamon 
Cream together butter, 1 cup of sugar, and egg.  Add milk, flour, and baking soda.  Put 1/2 of batter (or a little less) into a greased loaf pan.  Mix in separate bowl the 1/3 c sugar and cinnamon.  Sprinkle most of the cinnamon mixture on top of the 1/2 batter in the pan.  Add remaining batter to pan; sprinkle with last of cinnamon topping.  Swirl with a knife.  Bake at 350 degrees for 45-50 minutes or until toothpick tester comes out clean.  Cool in the pan for 20 minutes before removing.
