blueberry coffee cake

IMG_6778I made a coffee cake this afternoon, and it was delightful!  It’s a dense, moist cake, and a really keeper in my book.  It calls for blueberries, but I think really any kind of berry would be wonderful.  Enjoy!

Blueberry Coffee Cake
2 cups flour
3/4 cup sugar
1/4 cup margarine
3/4 cup milk
2 1/2 tsp. baking powder
3/4 tsp. salt
1 cup blueberries
 Crumb Topping:
1/4 cup firm margarine
1/2 cup sugar
1/3 cup flour
1/2 tsp. cinnamon
(Mix all ingredients until crumbly)
1/2 cup powdered sugar
1/4 tsp. vanilla
2 tsp. hot water
 Heat oven to 375 degrees.  Grease a round pan.  Prepare crumb topping; reserve.  Mix ingredients for cake except blueberries; beat 30 seconds.  Fold in blueberries.  Spread in pan.  Sprinkle with crumb topping and bake for 45-50 minutes or until done.  Cool 10 minutes.  Drizzle with glaze.
